Almond Cookies

DELICIOUS ALMOND CHOC-CHIP COOKIES

These cookies are nearly too good to be true, they are one of my go to recipes for my sweet tooth. They are perfect for that cookie craving & yet they are gluten free, dairy free & can be modified to be sugar free or vegan.

Ingredients:

  • 137g Almond meal

  • 30g Dark chocolate - chopped up (make sure it is dairy free, I love the Lindt 70% dark chocolate)

  • 40g Shredded coconut (unsweetened)

  • 73g Coconut nectar or brown sugar (can be omitted if the chocolate chips used are sweet)

  • 1/4 tsp Salt

  • 1/2 tsp Baking powder (make sure it is gluten free)

  • 1 Egg (large or 2 small) - egg replacer can be used to make the recipe vegan

  • 3 tbsp Coconut oil - Melted

  • 1/2 tsp Vanilla extract (can substitute vanilla essence but not as delicious)
