  • 2 tablespoons raw apple cider vinegar

  • 1 large onion roughly chopped

  • 4 celery stalks with leaves roughly chopped

  • 3 carrots roughly chopped

  • 1 garlic bulb cut in half

  • 2 large handfuls of parsley

  • 1 tablespoon of peppercorns

  • 3 bay leaves Salt to taste

  • 5 litres of filtered cold water use organic ingredients where possible use any extra food scraps you have, off cuts of carrots or potato peels do not peel or cut ends off above vegetables, there is a lot of nutrients in them.

METHOD

1: Place all ingredients into a large stockpot or slow cooker and fill with 5 litres of cold water. Leave to stand for 30 minutes to an hour.

2: Place on a high heat and bring to the boil. Skim any skin or foam that forms on the surface. Reduce to a low heat and simmer for 6-12 hours. The longer you cook your ingredients, the more flavoursome your bone broth will become.

3: Allow to cool slightly before passing the broth through a fine sieve into a storage container. Cover and place in the fridge overnight until the fat rises to the top. Skim this layer off. The broth can be stored in the fridge for 4 days, or portioned and frozen for up to 3 months.
